We’re talking cashews, peanuts, almonds….you know snacking food. Sure you can always find single pack bags of cashews and peanuts in a variety of covered flavors but what about some roasted almonds or boiled peanuts? You have to hunt far and wide for these babies. Well not really for boiled peanuts because you can find those on the side of the road pretty much anywhere down here but almonds are hard to come by. My bosses wife went to one of those wholesale stores, Costco, last night and got a 3 lb bag of almonds and brought me in a pound of them today. That was so sweet of her. Now I was trying to figure out how to roast these bad boys with a good recipe and sure enough the internet is always there to help out and I even found a recipe for boiled peanuts too. Sure I knew it was water, salt and boil but beyond that I hadn’t a clue of the amounts or for how long. So here’s some recipes for you too. Gonna go roast me some me some almonds now.

Cinnamon-Roasted Almonds

INGREDIENTS – Makes 16 servings

1 egg white
1 teaspoon cold water
4 cups whole almonds
1/2 cup white sugar
1/4 teaspoon salt
1/2 teaspoon ground cinnamon

DIRECTIONS

1. Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10×15 inch jellyroll pan.
2. Lightly beat the egg white; add water, and beat until frothy but not stiff. Add the nuts, and stir until well coated. Mix the sugar, salt, and cinnamon, and sprinkle over the nuts. Toss to coat, and spread evenly on the prepared pan.
3. Bake for 1 hour in the preheated oven, stirring occasionally, until golden. Allow to cool, then store nuts in airtight containers.

Boiled Peanuts

INGREDIENTS – Makes 40 servings

5 pounds raw peanuts, in shells
1 cup salt
water to cover

DIRECTIONS

1. Wash the peanuts and place them in a pot. Add salt and water. Bring the water to a boil.
2. Let the water boil for 3 hours.
3. Taste the peanuts, if they are not salty enough for your taste add more salt. If you would like the peanuts to be softer, return the water to boil and cook until they reach the consistency you desire.

But really, for boiled peanuts 40 servings? Seems a bit much considering I can eat a pound myself. They do weigh those things with the shells you know.

    I love boiled peanuts, especially if you find someone with a good, handed down recipe. Flea markets are good places to look.

    Even i don’t like cinnamon that much i’m going to try the first recipe. Thanks for that – it sounds really tasty…
